When the Farmers Hand You Eggs...


The Market Inspiration

With so many different preparations, it isn't surprising that everyone has their own favorite style of egg. My personal favorite is the poached egg because they are so different from the more common egg preparations, they aren't greasy and taste perfect with warm toast.
When poaching eggs, it is vital to use the freshest of eggs, which means that Farmer's Market eggs are ideal for this purpose.
The most common poached egg dish is Eggs Benedict, which is traditionally served with an English muffin, hollandaise sauce, and ham. For Valentine's Day, I am spicing up the recipe a little by replacing the muffin with a sweet corn cake, the hollandaise with avocado-tomatillo salsa, and the ham with carne asada.



The Recipes (makes 2- 4 servings)

Sweet Corn Cake
1 Cornbread Mix (I used Famous Dave's)
1/4 cup butter, melted
1/3 cup milk
1 Tbsp. honey
1 can sweet corn, drained

Preheat oven to 350°.
In a bowl, combine the cornbread mix, melted butter, milk, honey, and corn. Add batter to a greased 9x9 square baking dish.
Bake for 25-30 minutes until golden brown.

Avocado Tomatillo Salsa

Carne Asada
2 pounds marinated Carne Asada

Use your favorite pre-marinated Carne Asada. Grill on high heat for 2-5 minutes on each side.

Poached Eggs
2 eggs per person, poached

If you do not know how to poach eggs, watch this video from Alton Brown on how to make the perfect poached eggs.

To Serve
Cut the corn cake into individual pieces. (I used a heart shaped cookie cutter.) Place on your plate as the base of the dish. Add the carne asada on top, then the salsa, and then the poached eggs. Garnish with salt, pepper, and cilantro.


The Pairing

Shakespeare's Romeo and Juliet is considered to be one of the greatest romance stories ever written and there are countless screen adaptations, but the best and most entertaining is 1961's West Side Story. This is achieved by transporting the story from Italy to 1950's Manhattan and adding songs, featuring extended dance sequences and a Puerto Rican-flavored score. Of course, West Side Story is also a beautiful and moving love story perfect for Valentine's Day. -Z
